Cheer For Chicken Salsa Quesadillas

Sour Cream |
Place one flour tortilla in a non-stick skillet on medium-low to medium heat. Spread salsa evenly over tortilla. Sprinkle Mozzarella cheese. If desired, add vegetables and chicken. Be sure the chicken is skinned, chopped and cooked ahead of time. Place second tortilla on top. Flip occasionally until both sides are lightly browned. Dip in guacamole, sour cream or salsa.

Preheat oven to 325 degrees F. In an oven safe casserole or quiche dish, layer ingredients as listed above starting with the black beans. Bake in oven for 20 – 30 minutes or until bubbly. Serve with tortilla chips.

Tortilla chips |
Use a large pasta bowl (oven safe) and place chips generously to fill bowl. Sprinkle with Swiss and cheddar cheese. Set aside. Cut chicken into strips – sauté in oil, garlic and pepper. Place chicken on chips and cheese. Put in 350 degrees F oven until cheese begins to melt. Remove. Add scallions, salsa and serve.

Combine ingredients and heat all in a sauce pan. Cook on low heat until smoky links are hot.

In a mixing bowl, rough mash the avocado with Chunky Garden Salsa to form guacamole. Grill hot dogs to desired doneness. Place grilled hot dogs into buns. Spread some guacamole on each hot dog. Drizzle some Chile Con Queso and then top with diced onions, Chunky Garden Salsa and some crushed tortilla chips.

Monterey Jack cheese, shredded

Brush chicken breasts lightly with oil and season with salt, pepper and chile powder. Grill on a hot grill for about 20 minutes until fully cooked. Remove from grill and dice. Cover 4 tortillas with diced chicken. Spread a thin layer of Chunky Garden Salsa on top of chicken. Top with shredded cheese and then cover with remaining tortillas. Place quesadillas on a baking sheet and bake in a 400 degrees F oven for 8-10 minutes or cook in a panini grill until slightly browned and cheese has fully melted.
